If you are going for the history and want to climb up a rickety flight of stairs to squeeze in for dinner, head to the Cha Ca La Vong, which is written up in all the guide books. If you want to try delicious cha ca in a clean and comfortable environment, without the pressure to pay for the “special” essence of beetle, give Cha Ca La Vong a pass and go a little further a field to Cha Ca Anh Vu. Here, they use two kinds of white fish including the infamous snake head fish, fried in turmeric. The sizzling pan arrives at your table on a charcoal brazier which you then pile high with a mix of herb, which wilt atop the sizzling fish. Add this hot mixture to a bowl of bun noodles, shredded scallions and some mixture of fish sauce and shrimp paste sauce.
